If I’m forced to watch football, it better be with a good snack – and here’s the best yet.
Simple and delicious nachos. Serves 4.
WHAT YOU NEED
- 1 bag tortilla chips
- 1/2 red onion, thinly sliced
- red and green chillies, diced (as hot as you like)
- small bunch coriander and/or parsley, chopped
- handful cherry tomatoes, roughly chopped
- A LOT of grated cheddar (we went through more than we thought)
METHOD
- Line a baking tray with greaseproof baking paper
- Place one layer of tortilla chips
- Top with half of all the ingredients
- Cover with a second layer of tortilla chips
- Place the remaining toppings and be generous with the cheese
- Bake in the oven for 10 mins at 150 degrees, or until the cheese it nice and melty
- Top with splodges of sour cream, guacamole and salsa
