Nacho’ average football snack

If I’m forced to watch football, it better be with a good snack – and here’s the best yet.

Simple and delicious nachos. Serves 4.

WHAT YOU NEED

  • 1 bag tortilla chips
  • 1/2 red onion, thinly sliced
  • red and green chillies, diced (as hot as you like)
  • small bunch coriander and/or parsley, chopped
  • handful cherry tomatoes, roughly chopped
  • A LOT of grated cheddar (we went through more than we thought)

 

METHOD

  1. Line a baking tray with greaseproof baking paper
  2. Place one layer of tortilla chips
  3. Top with half of all the ingredients
  4. Cover with a second layer of tortilla chips
  5. Place the remaining toppings and be generous with the cheese
  6. Bake in the oven for 10 mins at 150 degrees, or until the cheese it nice and melty
  7. Top with splodges of sour cream, guacamole and salsa
