Chocolate chunk skillet cookie

It’s not even midweek and I felt the need for a choccie-centric dessert – and VOILA the chocolate chunk skillet cookie with a melting centre is born.

Made to share but perfect for one after a really long day, the dough is a simple one – easy to freeze and plenty to save for later.

You can change up the flavours as you please (e.g dark chocolate and orange essence) but this is the classic, laden with big melty chocolate chunks as opposed to your basic chip.


WHAT YOU NEED METHOD
  • 100g caster sugar
  • 165g brown sugar
  • 160g plain flour
  • 115g melted butter
  • 1 egg
  • 1/2 tsp baking soda
  • 1tsp salt
  • 1tsp vanilla extract
  • 115g milk chocolate, chopped
  • 115g dark chocolate, chopped
  • melting centre: 50g milk or dark chocolate, chopped
  1. In a large bowl, combine the sugars, butter and salt and whisk
  2. Whisk in the egg and vanilla
  3. Sift in the flour, and lightly fold in
  4. Tumble in the chocolate chunks and fold gently
  5. Press one layer dough into the lightly greased skillet
  6. Place the 50g chocolate into the centre
  7. Cover with the rest of the dough, pressing the edges together to seal
  8. Bake at 200degrees for 15-20mins or until golden brown

Serve with fresh raspberries for vibrance and a scoop of vanilla ice cream.
