Simple salmon parcels

A quick and easy mid-week dinner, adapted for any cuisine, any time!

Even as self-confessed carnivores, we have to opt for fish once in a while.

This one really is a nice and easy dish – both in preparation and in cooking time – so it quickly become a go-to ‘I’m hungry but I can’t be bothered to coooook’ option.

End results are always satisfying, healthy and best when strong punchy flavours are left to bake on delicate fish.

What’s more, this dish leaves plenty to the imagination – you can adapt this to any cuisine based on what you have at the time.

Here are my top 2 salmon parcel favourites:

Teriyaki salmon parcels

WHAT YOU NEED METHOD
  • garlic, crushed
  • ginger, sliced thinly
  • 2 salmon fillets
  • 1 carrot, sliced
  • 1/2 a red onion, sliced rounds
  • broccoli florets
  • 1tbsp soy sauce
  • 1tbsp hoisin sauce
  • squeeze of lemon juice + slice on top
  • 1tsp paprika or cajun seasoning
  1. Tear a length of  foil and place on a baking tray
  2. In the centre, start with 3 rounds of red onion (to match the length of the fish)
  3. Sit the salmon on top and place the vegetables along the side
  4. Top with garlic, ginger, lemon juice, paprika, soy and a glug of hoisin sauce
  5. Bring both sides of the foil together to meet in the middle and scrunch to seal
  6. Bake for 18 mins at 180 degrees in a fan oven and serve on a bed of rice

Pesto salmon parcels

Simpler still, topping salmon with green pesto and adorning with green beans is a fresh and simple variation of this dish.

WHAT YOU NEED METHOD
  • 2tbsp green pesto
  • 2 salmon fillets
  • handful cherry tomatoes, halved
  • 1/2 a red onion, sliced rounds
  • 1 pack of green beans, trimmed
  • squeeze of lemon juice
  • 1tsp paprika or cajun seasoning
  1. Tear a length of  foil and place on a baking tray
  2. In the centre, start with a flat bed of green beans
  3. Place the onion rounds on top and sit the salmon on it
  4. Place the tomatoes along the side, sprinkle on paprika, lemon juice and pour on the pesto
  5. Bring both sides of the foil together to meet in the middle and scrunch to seal
  6. Bake for 18 mins at 180 degrees in a fan oven and serve beside potatoes

Ta-da! Easy baked salmon, loaded with flavour and ready to serve in minutes.
