Simple yogurt and chilli dressing

A fresh summery yogurt and chilli dressing for 2

I’m mixing up random sauces all the time, but this one quickly became a go-to dressing.

It’s great drizzled over salads, chicken or rice and adds a fresh and zingy kick to any dish.

Using greek yogurt is especially nice as it adds a thick and creamy texture, but normal natural yogurt works just as well.

In my usual case, I use this dressing to calm down an *extremely* spicy cajun chicken dish!

  • 1/2 red chilli, diced
  • Juice of 1/2 a lemon (zest optional)
  • 1 tbsp olive oil
  • Small bunch of coriander, finely chopped
  • 3 mint leaves, finely chopped
  • 4 tsp Greek yogurt

METHOD

More or less, the ‘method’ here is simply mixing together in a bowl, but I find letting the chillies sit in lemon juice while you chop the rest

  1. In a bowl, add the diced red chillies and a generous squeeze of the lemon juice and let sit.
  2. Add the coriander, mint, olive oil and mix.
  3. Lastly, add the yogurt and have a taste!
